Happy spring! There is something so wonderful about this time of year, where after months of surviving extra darkness and cold temperatures, we finally start to see signs of life again. And for me, that includes an influx of spring related activities, making it hard to make time to create delicious and healthy meals.
My Sweet & Spicy Glazed Salmon recipe was a recipe I posted a couple of years ago, and to this day it is still one of my staples when I want a healthy meal that involves fish. You probably have all of the ingredients to make the glaze in your pantry right now, which makes things even easier, right?
Sweet & Spicy Glazed Salmon
- 1 1/2 lbs fresh wild caught salmon fillets
- 1/4 cup 100% pure maple syrup
- 1/2 teaspoon ground paprika
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground cayenne pepper
- Kosher salt and fresh ground black pepper to taste
- Cooking spray
Step 1: Rinse off your salmon filet with water, then pat dry with paper towels. Set your oven temperature to 350 degrees.
Step 2: Prepare the marinade. In a small bowl, combine the maple syrup, paprika, cumin, cayenne, and the salt and pepper to taste. Whisk until well combined.
Step 3: Prepare a baking sheet with aluminum foil, and spray with non-stick cooking spray. Place the salmon on the sheet, and brush generously with the marinade.
Step 4: In the pre-heated oven, bake the salmon for 18 minutes, re-applying the glaze to the salmon half-way through cooking. When the salmon is fully cooked, it should be very easy to peel the skin from the flesh of the salmon fillets.
