Cauliflower is quickly becoming one of my favorite vegetables, as it is loaded with essential vitamins and nutrients. Even though my kids do pretty well eating steamed cauliflower, I have been trying to experiment with new and creative ways to prepare it. I stumbled upon several Cauliflower Tot recipes on Pinterest, and knew these would be a winner for the whole family!
- 3 cups of steamed cauliflower, very finely chopped
- 1 cup of shredded cheese (I used part skim mozzarella)
- 1 egg
- 1/4 cup cornmeal
- 1 teaspoon kosher salt
- 1/8 teaspoon freshly ground black pepper
- 1/2 teaspoon Dijon mustard
- Olive oil cooking spray
Yield: 24 tots
Step 1: Quarter the head of cauliflower and steam for approximately 10 minutes. Preheat your oven to 350 degrees.
Step 2: Allow the cauliflower to cool, then finely chop the entire head including the core.
Step 3: Add the cauliflower to a bowl and combine with all other ingredients. Use your hands to mash everything together until it looks something like this:
Step 4: Spray a mini muffin pan with the cooking spray and fill the cups with dollops of the cauliflower mixture, pressing down to form as needed.
Step 5: Bake in the 350 degree oven for 20 minutes, or until golden brown. Allow to cool before serving. Hope you enjoy them as much as we do!
