Stuffed Mushrooms are one of my very favorite appetizer dishes - they taste amazing, and there are so many ways to mix up the ingredients and flavors. Today's mushrooms recipe has been formulating in my mind over the last few weeks, as I have been thinking about the best flavor combo to pair with Beyond Meat's Beefy Crumbles.
After a recent garden harvest, I decided that zucchini and sweet banana peppers would be awesome to include in the recipe.

And now, for the recipe!
- 20 baby bella mushrooms, stems removed and finely chopped
- 1/2 cup of finely diced sweet onion
- 1/2 cup finely diced sweet banana peppers
- 3/4 cup shredded zucchini (squeeze to remove excess water)
- 1/4 cup panko breadcrumbs
- 1/2 cup tomato sauce
- 1/2 tsp dried minced garlic
- 8 ounces Beyond Beef - Beefy Crumbles
- 1 tbsp coconut oil
- Kosher salt and fresh ground pepper to taste
Step 1: Pre-heat your oven to 350 degrees. Spray a 9x13 baking sheet with cooking spray and set aside.
Step 2: In a non-stick skillet, add the coconut oil, then the onion and peppers and allow to cook down until slightly soft. Next add the mushroom stem pieces, zucchini, minced garlic, and salt and pepper and cook for an additional 2-3 minutes. Lastly, add the tomato sauce and Beefy Crumble and cook for another 2 minutes, breaking down the Beefy Crumble into smaller pieces as needed. Remove from heat.
Step 3: In a bowl, combine the cooked ingredients with the panko breadcrumbs and using your hands, mash the mixture together until it becomes a stuffing-like consistency.
Step 4: Stuff the mushrooms, using generous amounts of the stuffing mixture for each
Step 5: Cook the mushrooms in the pre-heated oven for 20-25 minutes. You can also pop them under the broiler for 2-3 minutes to brown the tops if desired. Allow to cool before serving. Enjoy!!
