I have a bit of a tomato "problem" going on at my house right now....yes, you read that right...my problem is that I have so many ripe tomatoes from my garden right now, that they are literally taking over my refrigerator. Here are what both of my crisper drawers look like at the moment:
When comparing this roasted style sauce vs. other saucing methods, I think you will find it incredibly easy, simple, and flavorful.
Roasted Tomato and Garlic Sauce
- 5 medium sized tomatoes,
- 2 cloves fresh garlic, finely minced
- Olive oil
- Kosher salt and freshly ground black pepper
- Cooking spray
Step 1: Preheat your oven to 400 degrees. Line a baking sheet with aluminum foil and coat with cooking spray.
Step 2: Using your hands, remove the seeds from the tomato section and discard.
Step 3: On the prepared baking sheet, line up the tomato slices cut side down. Sprinkle the minced garlic over the tomatoes, then season with the salt and pepper. Lastly, generously drizzle olive oil over the tomatoes and garlic.
Step 4: Put the baking sheet into the preheated over and allow to cook for 25 minutes. They should look something like this coming out of the oven:
Step 5: Using a food processor, pulse or process the tomato garlic mixture to your desired consistency. I usually freeze off my batches of sauce in mason jars - they will keep in the freezer for months! Hope you enjoy!
