It’s hard to believe that it’s already November, and the holidays are quickly approaching! It seems like just yesterday that I was dropping my kids off for their first day of school. The weather here in New England has been pretty dreadful lately, with lots of cold rainy days and no end in sight. I really love making soups in the cold weather, so I decided to work on a new soup recipe to keep my spirits up - hopefully I will see the sun again sometime in the near future!
In my college years, I was lucky enough to spend a semester abroad studying in Florence, Italy. My time there has helped shape my life in such a positive way, especially when it comes to my passion for good food. The combined flavors of tomato, basil, and mozzarella cheese are prominent throughout many of the Italian regions, and together they prove to be a winning combination in this hearty, healthy, and flavorful soup.

Caprese Sausage Soup
- 1/2 of a large sweet onion, chopped
- 2 large cloves of garlic, minced
- 28 ounce can of diced tomatoes
- 3 ounces of tomato paste
- 32 ounces reduced sodium chicken broth
- 10 ounces chicken sausage, sliced (I used Gilbert's Caprese Chicken Sausage)
- 2 14 ounce cans of cannelini or white northern beans
- 3 cups chopped fresh kale
- 1/4 cup finely chopped fresh basil
- 1/2 teaspoon dried oregano
- 1 bay leaf
- Salt and pepper to taste
- Mozzarella cheese for garnish
Step 1: Heat a Dutch oven coated with a tablespoon of olive oil to medium high heat. Add the onions and garlic, and cook for 4-5 minutes until fragrant. Add the diced tomatoes, tomato paste, half of the chicken broth, and the oregano, bay leaf, salt and pepper and bring to a boil. Reduce heat to a simmer and cook for 30 minutes.
Step 2: Add the chicken sausage and white beans to the pot. Stir to combine and allow to simmer for an additional 15-20 minutes.
Step 3: Add the chopped kale and fresh basil. Remove from heat, allowing the greens to wilt, and let sit for 10-15 minutes before serving. Top with grated or shredded mozzarella cheese.
